Kids will always give you honest feedback, good or bad. I knew I had a winner with these brownies when my two couldn’t get enough of them. This simple brownie recipe calls for about 50% less butter than traditional versions, thanks to the addition of mashed avocado. The healthy monounsaturated fats in avocado provide a fudgy texture while minimizing saturated fat and even adding a little fiber.
Fudgy Avocado Brownies

Total Time: 1 hour, 10 minutes
Ingredients
2 ripe avocados, peeled and mashed
5 Tbsp butter, melted
1 ½ cups sugar
4 large eggs
1 tsp vanilla extract
1 cup flour
2/3 cup unsweetened cocoa powder
½ tsp baking powder
½ tsp salt
3 Tbsp mini semi-sweet chocolate chips
Directions
1. Preheat oven to 350 degrees.
2. Add mashed avocado, melted butter, and sugar to a large bowl. Blend with a mixer until smooth. Add eggs and vanilla. Stir gently until combined.
3. In a smaller bowl, stir flour, cocoa powder, baking powder, and salt. Slowly stir in flour mixture to cocoa mixture, then gently fold in chocolate chips.
4. Pour batter into a lightly greased 13-x 9-inch baking pan. Bake 25 minutes or until center is set. Cool completely. Cut into 20 squares.
